As for the symbolism…
There is, of course, the underlying "hidden" message in the story that Goku will pick out - that Frieza himself is, as he deduced, all of the evil beings described. However, from Frieza's perspective, it breaks down a bit differently.
The beast is just that, a simple-minded beast that is easily swayed, has little self-control, & can be controlled by others against the forces of good. It initially does not speak to the farmer, emphasizing that it is a "lower" life-form. From Frieza's perspective, all of the other races in the Galaxy may as well be Beasts - they're not as smart as he is, not as strong-willed, & can be easily conquered & controlled, unless they attack as a mob or are otherwise goaded into disobedience.
The monster is a Saiyan. The monster can speak, but behaves more like the beast than the farmer, assured of its own superiority despite being in a compromising position. Visually, the description of a "horrid, hairy monster" conjures up the same feelings of revulsion in an Arcosian that slimy animals & reptiles evoke in humans. So, this is the being we are supposed to dislike the most. The thing about it dying in sunlight is my attempt to make a connection with Saiyans turning into Oozaru with the moon.
Finally, the demon is a representation of a transformed Arcosian, something that was once a "person", but now is something twisted & unnatural, without a soul of its own. It is the most intelligent, & therefore, the most dangerous. The farmer is beguiled by it because he empathizes with the demon, even to the point of pity. The emphasis on this being is that, in the story, it cannot be reformed or reasoned with - it is very nearly pure evil. From Frieza's perspective, this is what he has become - a being of god-like power, something no living thing can defy & live. He is revered & reviled at the same time, a living legendary creature, something to behold with awe & fear. Ergo, in his own subconscious, he believes himself to be beyond redemption, the inevitability of his nature choosing his fate as a destroyer & conqueror.
